Breakfast Waffle Club Sandwich with Honey Apple Syrup

YIELD: Makes 4 servings

INGREDIENTS

1/2 cup - honey

1/4 cup - apple juice

2 T - butter

2 - crisp red apples, cored and thinly sliced

4 - frozen Belgian waffles, toasted

6 oz. - Black Forest ham, thinly sliced

4 slices - Swiss cheese, cut in half diagonally

4 slices - thick-cut bacon, cooked crisp, cut in half

additional honey, for serving

DIRECTIONS

Preheat oven to 300°F.

Combine the honey, apple juice and butter in a saucepan and stir together as the butter melts. Add the apple slices and simmer for 12-15 minutes until tender, cover and keep warm.

Place the waffles on a baking sheet and top each with 1/2 slice of cheese, ham, both halves of the bacon and the other 1/2 slice of cheese. Bake for 8-10 minutes until cheese is melted.

Remove the waffle sandwiches from the oven and serve each waffle with the apple slices and sauce they were cooked with. Serve immediately with additional honey.

TIP

You can make your own waffles in a waffle iron if you have extra time! Also, you can substitute pears for the apple for a seasonal twist.
